2.Two months ago, Fred Sneed became the owner of a small bar in
Centreville.
When he assumed ownership, beverage cost percent was 24.5
percent.
Since Fred assumed ownership, beverage cost percent has increased
to
29.5 percent, although there have been no increases in purchase
prices and
the sales mix has not changed. The bartender has been employed in
the
establishment for the last eight years. Fred has concluded that the
increase
in beverage cost percent is somehow related to the bartender and
has
decided to observe his performance closely. Given the list of poor
work
practices identified in this chapter, rank in order of importance
the five
that he should watch for as he observes the bartender at work.
1) The customer may be coming in contact with a lot of people in the establishment. So socialising may be one of the reason for patronising.
The second reason may be business related where the customer solicits business deals from people coming to the establishment.
The third reason may be the establishment sells various types of food along with alcohol and the customer likes to have the food.
The fourth reason may be that the establishment may provide for some entertainment like dance, games etc. which the customer is interested in.
The fifth reason may be that the customer has spare time and wants to spend his time in the establishment.
2) Fred should watch out for the following:
a) Beverages stolen and not sold to the customer.
b) Sale price less than that done previously.
c) Broken beverage bottles signalling unsold beverages.
d) Beverages being served per glass and there is wastage due to spillage etc.
e) Beverages being given by bartender free to his known people.
