Subject:             Summary of Internship Survey of Chain Restaurant Desserts

Mr. O'Neill:

As an intern here at Midland Food Services I appreciated the opportunity you gave me to informally investigate desserts offered by 8 major chain restaurants. At our October 20th meeting of interns you mentioned that deserts are suppose to be enjoyable and how many of the chains were missing a big opportunity to develop a dessert business.

To complete my Internship Project No. three I visited 8 of the biggest and best restaurant chains in Wilmington North Carolina and bought and tasted all there desserts. I rated each on a scale of 1 to 10. Over a period of 5 weeks I tryed over thirty desserts from the chain restaurants. Although my full report will be submitted shortly here is a brief summary of the dramatic but disappointing results

  • Surprisingly the average dessert score was only four point two on a 10-point scale. I rated them for taste, texture, convenience, healthfulness and freshness of concept.

  • 1/2 of the chains still have “hot apple pies.” Which are a leftover from the 1960’s. These “pies” are largely dough with an overpowering taste of cinnamon and sugar. They have 480 calories with eighteen grams of fat. Thats more then a Cheeseburger or an order of French Fries!

  • 1/3 of the chains offered chocolate chip cookies, they cost between ninety-nine cents and two dollars. The high-priced cookies each contained over 15 grams of fat and weighed in at three hundred or more calories!

Finding: The best chain dessert I encountered was “Fudge-Grande-Choco Taco” from Taco bell. It was innovative, good tasting, compact and energizing.

The full findings of my informal survey are contained in three eleven-page reports. That I will distribute at the next Midland internship meeting on Tuesday December 12th.
