Monitoring of the tachycardia as levothyroxine can increase the heart rate, associated side effect

also, monitor the blood pressure and fluid retention

as levothyroxine is taken as empty stomach so the assessment of the percentage of breakfast is useless

Then it is advised to monitor the daily weight as the weight loss is a secondary adverse effect associated wtth the levothyroxine therapy.

Pain & headache should also be monitored

Then monitor most recent thyroid hormone levels, to assess the response of the therapy
