Food Service Worker in a Long Term Care Facility suggest some of the

accommodations that the following residents may require and how you

might best serve the following clients.

Mr. Smith is a sociable, right handed gentleman born on October 1, 1923.

Mr. Smith utilizes a walker to come to the main dining room for all his

meals. He has limited hearing in his left ear and due to a stroke he has

limited use of his right hand and his some difficulty swallowing thin liquids.

Mr. Smith is allergic to peanuts. Mr. Smith enjoys ice cream, but dislikes

potato. Mr. Smith occasionally suffers from constipation.

Mrs. Jones is a quiet, woman born on April 2, 1928. Mrs. Jones walks to the

main dining room for all meals. Mrs. Jones eats small amounts and is upset

if food is wasted. Mrs. Jones wears dentures. She enjoys a cup of tea, but is

not fond of red meat. Mrs. Jones has recently moved to the long term care

facility after the death of her husband.

Elderly patients should get a good care according to their health status.

For Mr. Smith, the accommodations should be arranged in the ground floor or nearby lift facility because he need help of the walker. Always try to talk loud or stand on his right side for better hearing while talking. Provide support to his right side and he will be using mostly left hand due to stroke.

Regarding his food, he should be avoided of thin liquids like juice and watery food since he has difficulty to swallow thin liquids. Avoid peanuts in his menu chart. Add other dry fruits. He should be on high fiber diet to avoid constipation. Salt should be limited in his diet and limit the servings of meat to avoid constipation. He can be given ice creams since he enjoys it.

For Mrs.Jones, the accommodation can in the first floor near to lift facility since she can walk without help. She eats less so no need to serve a lot for her. Include nutritious foods in her menu since her intake is less. Soft diet is highly recommended for her because of the use of dentures. Can include vegetables and fish in her diet and avoid red meat since she is not fond of it. In the morning and evening serve her a cup of tea.
