The redox reaction of copper, nitric acid and distilled water is :

3Cu (s) + 8HNO3 (aq) --------------------> 3Cu(NO3)2 (aq) + 2NO (g) + 4H2O (l)

Cu with dilute HNO3(or in the presence of distilled water) gives copper nitrate and nitric oxide (NO) gas. But with concentrated HNO3, Cu will gives copper nitrate and nitrogen dioxide (NO2) gas.
