Complex sugars cannot be used for body matabolism; therefore, they are converted to simple sugars by enzymes, so that they can be utilized for body metabolism. Enzymes such as amylase, maltase, etc., breaks down complex carbohydrates (polysaccharides and disaccharides) to simple carbohydrates (monosachharides).

Amylase breaks down polysachharides (amylose) to disaccharides such as maltose. Maltase enzyme breaks down disachharides to monosaccharides such as glucose.

alpha-maltase enzyme converts amylose and amylopectin to maltose. Maltose is disaccharide of 2 alpha-D-glucose.
