e) The purpose or function of methanol is to act as an intiatin agent for polymeriation. Aspartic acid, Phenylalanine and Methanol are the components for synthesis of aspartame. Phenylalanine is slightly modified by reaction with methanol resulting in a compound called L-phenylalanine methyl ester.This dds a methyl group which is linked to the molecule by an oxygen, and the compound is converted into methyl ester. The methanol required for the synthesis of aspartame has the chemical structure (CH3-OH).
