On the left of the label is associates with fat droplet and on the right side of the label is associates with the aqueous chyme.

The bile salt is produced by the liver and is stored within the gall bladder and it helps in emulsification of the fat. The bile salt helps in fat emulsification by breaking down the large fat globules into tiny fat droplets within the duodenum. The large fat droplets are converted into small fat droplets which are suspended within the aqueous chyme. The left side is the hydrophobic side which binds to the fat droplet and right side is the hydrophilic or polar side which associates with the aqueous chyme. The hydrophilic side dissolves in aqueous chyme side and the fat droplets bind to the hydrophobic side of the bile salt. The enzymes do not bind to the bile salt as bile is natural emulsifier.
