Vinegar is a dilute solution of acetic acid in water. If a bottle of vinegar is left open to the air (room temperature) for a month then water will evaporate which results in increase in the the concentration of acetic acid in vinegar. This increase in the concentration of acetic acid causes pH to lowers down.

i.e., pH will decrease.
