I don't really get it because all three Carbons are the central atom.

When hybridization is SP then the two hybrid orbitals are oriented on carbon at an angle 1800. Hence geometry is linear.

When hybrid orbitals overlaps axially to form sigma bond and unhybridized orbitals laterally overlaps to form pi bond.
