The two major controllable costs as it relates to the operating costs of concessions at sports stadiums:

  1. The total cost of goods sold (COGS)
  2. The Labor Cost

The total cost of goods sold :

It includes cost of food, beverages and related products such as disposable cups, paper products etc.

The Labor Cost :

Labor cost not only includes payroll/salaries, but payroll taxes, medical coverage and other employee benefits.Labor is the most easily controllable cost as it relates to the operating costs of concessions at sports stadiums, so it only makes sense to set up a reporting system that helps managers to stay focused on controlling such cost.
