Overall it increases the entropy. Triglyceride is a very bulky maktter when lipase breaks it into glycerol and 3 fatty acids means that on reaction 1 species we are getting four products of lower molecular weights compare than triglyceride so the degree of randomness will be high of 4 products than reactant so the overall entropy increases.
