According to the literature, define “acculturation.” How does acculturation impact nutrition of Mexican Americans?
ANSWER:- Acculturation has been defined as “the process by which immigrants adopt the attitudes, values, customs, beliefs, and behaviors of a new culture”
Although acculturation is a complex phenomenon that is difficult to quantify, researchers often base their measures on simple static proxy indicators such as birthplace, language use, and number of years spent in the U.S.
Various measures and scales have been used among different studies examining the influence of acculturation on diverse health behaviors and outcomes among Latinos. This may partially explain the inconsistency across studies [and even within the same study using different acculturation indicators] addressing the influence of acculturation on nutrition and other health-related outcomes [e.g., birth weight and postpartum depression]. Although more multidimensional complex scales have been developed and used, these scales do not take into account the “life history” or trajectories of individuals that are so important for understanding acculturation.
Acculturation was operationalized through a score obtained by using an acculturation scale developed from selected variables in Kim’s (1988) model of communication/acculturation (language preference and use, ethnic identity, and social networks, as well as perceived discrimination) and from the scale of acculturation for Mexican Americans developed by Cuellar (1980) (language preference and use, ethnic identity and social networks).
