Explain why food preservation is important, and the morbidity and mortality aspects of the food borne diseases on the world. State some of the precautions mentioned in the book for the prevention of unnecessary deaths caused by certain organisms that cause to food poisoning.

Food preservation refers to storing food for a longer period of time with addition of the preservatives.This usually kills ,inhibits or prevent the growth of microorganisms especially bacteria   It can prevent wastage of food, the foods can be transported to a greater distance for example to the military camp.

• Worldwide 1 in 10 people are affected with good borne disease.
• Children under 5 year are 40% infected fue to contaminated food.This counts nearly 125000 death of children every year
• Nearly 420,000 die every year worldwide

Some of the precautionary method to be done to prevent food poisoning are

• Checking for the expiry date when buying a food product.Expired indicates the food is contaminated and can be harmful to health
• Avoid uncooked raw foods which harbours disease causing microorganisms
• Maintain hand hygiene to prevebt prevent cross infection and contamination
• Avoid eating foods from unhygenic places,foods kept open
• Cook the food properly
• Store food in airtight container in case of dried food products.In case of moisture containing foods refrigerate it at the right temperature and use it as early as possible

Following this can save one from food borne diseases caused by salmonella, E.coli,camphylobacter,aflatoxin,etc., and stay healthy and disease free.
