Glycerol contains polar hydroxyl groups hence it has stronger interactions with water due to strong intermolecular hydrogen bonding. Whereas, vegetable oil contains triglycerides of fatty acids. That means the ester functional group with long fatty acid chain. The long fatty acid chains are hydrophobic in nature. Hence they repel the water molecules.

Whereas, Glycerol does not form any hydrogen bonding with ethyl acetate. But triglycerides of fatty acids do interact strongly with ethyl acetate due to hydrophobic interactions.

Thus glycerol and vegetable oil give opposite results upon addition to the water and ethyl acetate.
