1. Proteases and lipases digest the milk proteins and fats and the process take place in the small intestine. The bile is also  discharged into the small intestine. Digestion of the fat is performed using bile.

  • The milk fat gets converted into free fatty acids, monoglycerides and diglycerides, by the lipases, whereas the milk protein gets converted to amino acids and peptides. The components like amino acids, peptides, free fatty acids, etc formed from the digestion of milk protein and fats, then passes into the small intestine, from there it get absorbed by the villus of small intestine, then transfered into the blood stream. Binding reaction between the residue and substrate amino acid side chain, which will create serine protease binding site. The specificity of serine proteases is depends on the substrate residue N terminal with cleavage site.
