heirloom tomato genetic analysis - this technique are used to genetically modify the genes that are responsible for the taste of tomato. scientist have discovered that the taste of tomato is due to the a gene that are present in the genome of fruit.   first they was thought that the taste of flavor is due to the chemicals after that they give their focus on genes particularly on  alleles. when any form of genes developed due to mutation they get back to the same position of chromosome from where they were replaced and occupy the position.after that they observed that which alleles are controlling the production of certain chemical compound, sugars, acids, and aromatic compound that are responsible for making tomato good taste. after that they can easily separate the desirable genes and replace this weaker alleles with most taste or flavor giving gene to produce better taste tomato according to their choice.
