If any stretching band occurs in the region between 2700 cm-1 to 2900 cm-1 then you can confirm about the formation of product. Since if product formed then only sp3 C-H stretching will observed, as the reactant molecules have no sp3 C-atom. Again appearance of peak at ~ 1740 - 1760 cm-1 indicates that the double bond of maleic anhydride is absent due to formation of product.

The appearance of peak at ~ 1730 - 1715 cm-1 will confirm about the presence of starting material.
