It's a variable resistor called POTENTIOMETER. Potentiometers have three terminals and a cylindrical knob which is rotated to cause variable resistance between the middle and extreme terminal.

Central terminal of POTENTIOMETER is connected to R1. 1st or 3rd terminal can be connected to 5V and ground.
