HayyaHalwa is an Omanis chocolate producer. HayyaHalwa has a factory with five production lines that can produce a wide range of sweets. HayyaHalwa has just hired 50 operational employees last two months. Due to high demand of chocolate, none of training organized for the employees. Over many years, HayyaHalwa has invested heavily to make their production processes more efficient, with a continual focus on improving efficiency, quality and health, safety and environmental performance. HayyaHalwa considered all requirements in production as its important concern. It will influence HayyaHalwa capability to meet customers’ demand. Lately, HayyaHalwa has quality issues as two of their product lines are underperformed. The officers who do inspection reported on wastage found in the production section. To investigate, assigned Mr. Ali to do detail inspection. By using multivariate analysis, he hopes he will get a deeper understanding and quantify their ‘gut feel’ of which process variables - and the relationships between them to confirm product quality. While HayyaHalwa had long experience using The Unscrambler® software for analyzing sensory the development of product, the application of multivariate analysis methods in process control was new to the company. “Whether you like it or not, you have to explore”, said Mr. Ali. It was evident that a well-trained staff are required to run for quality analysis. It revealed that making chocolate requires an integration process through a proper step and stages. Operators in the production have to ensure the right speed, smooth operation and inspection on any variation. It is a critical process as thus this variable could be regarded both as a critical process variable as well as a response variable to measure efficiency of production. In addition, filling process and cooling of chocolate are influenced by standard temperature, humidity and time. Measurement of the output has to be according to the specification determined. By having the quality material, a proper process flow or procedure, good condition of tools, equipment and machine with the right capacity, the right people or operator who understand the process and requirements can help HayyaHalwa to maintain the quality of chocolate. Not only that, reduce defects and wastage, efficient process and quality product will save almost 35% cost in the product line. HayyaHalwa considers this problem as lesson and experience to be shared with other production lines and would give valuable insights specifically to us and other practitioners in the same industry.
