2Au + Fe(NO3)2 = 2AuNO3 +Fe

What would this reaction be considered? I assume Single Replacement, but with the reactivity series, the gold is not as reactive and the zinc, so would any reaction occur at all? Also, is there any difference in a single replacement reaction and a REDOX reaction?

You are right. This reaction won't happen. Fe has higher reduction potential than Au. So, Au can't replace Fe.

Say hypothetically that this reaction happens, then Au is getting oxidised and Fe is getting reduced. So, it's a Redox reaction. As Au replaces Fe from the salt, so it's also a single replacement reaction

The difference between Redox and single replacement reaction is-

Every single replacement reaction is necessarily a Redox reaction.

But not every Redox reaction is a single replacement reaction.

Consider the following reaction

2Mg + O2 ----------> 2MgO

This is a Redox reaction but not a single replacement reaction.
