In general, unstable means which is not stable i.e. something which can not be present or formed under ordinary conditions. In chemistry, generally the molecules which are unstable does not formed or present at ordinary conditions , also if present then they have a very short life span. Also in chemistry, generally the molecules having higher energy are more unstable, that means stability depends on energy of that molecule. Greater the energy lesser the stability or more the unstablility. For eg. He2 molecule is unstable as it is not present at normal conditions.
