how to tell which of these is two tailed, one tailed: different, more likely, fewer, etc.

(not understanding the hypothesis tests)

It is based on symbol present in alternate hypothesis H1.

< symbol implies left tailed (fewer)

> symbol implies right tailed (more likely)

"not equal" symbol implies two tailed (different)
