P.F Chang's "American Bristo" is a combination of American-Chinese delicacies. He brings Chinese food to China with an American twist to it. This includes the sweet fried chicken, noodles in a paper cup etc.
The flavors are new to the Chinese people but the base food, say the noodles, beef or chicken remains the same. Being adventurous, the Chinese people will try out new flavors and visit the restaurant but P.F Chang's restaurant may fall out of flavor once that craze is over. P.F Chang argues that he only needs 2% of the niche segment of customers for his restaurant to do well, but the matter of the fact is that the regular customers who like authentic Chinese food would not visit his restaurant, similarly people liking authentic American or Continental food will not visit " American Bristo" because there are plenty of competitors serving authentic American food in China.
P.F Chang should continue serving the American-Chinese cuisines but also include authentic Chinese or American cuisines to broaden his target segment and increase the number of prospective customers by including special dishes each month.
