Answer The yeast utilize the Embden Meyerhoff pathway of metabolism and produce major end product of ethanol and Carbon Dioxide from glucose metabolism.

Bacteria that uses the same pathway as the previous question and produces Lactic acid as chief end product are called Homo fementative lactic acid bacteria.

Heterofermantative lactic acid bacteria utilizes the pentose shunt [hexose monophosphate] pathway and produce Lactate, Carbon dioxide and ethanol as end product in more or less equal amounts.

Yeast ferment lactose = Kluveromyces fragilis

Yeast that do not ferment lactose = Saccharomyces cerevisiae
