The difference is pretty much clear. We know that water is polar solvent while organic solvents are non polar in nature. Now the first compound has the positively charged imidazole rings which makes the whole molecule polar and as a result it is soluble in water. While the second one has no such polar group so it is only soluble in organic solvent!
