Ans :

The beans have complex sugars in them which when ingested cause flatulence and make a person pass gas more frequently than normal.

When beans are soaked in water , the water absorbs most of these gas producing complex sugars. So discarding this water before cooking beans lowers the gas producing qualities of the prepared bean dish.
