Erucic Acid HO HO Arachidonic Acid

The two mentioned acids are drawn as above. Erucic Acid as a monounsaturated acid which means that it has only one double bond. However, Arachidonic acid is a polyunsaturated acid having four double bonds. Therefore in complete hydrogenation of 1 mole Erucic acid, 1 mole Hydrogen is needed (22.4 L at STP) whereas for 1 mole Arachidonic Acid, 4 moles of Hydrogen is needed (89.6 L at STP). In this way, the acids can be distinguished.
