Answer #1

According to these Statements

1) the viscosity of the solution of sodium algenate decreases when calcium chloride is added

It is FALSE.

Because the viscosity of the solution of sodium algenate increases when calcium chloride is added. While Calcium Chloride is added to the Sodium algenate solution, resultant solution which is in gel type has high viscosity range which can hold the microbubbles for lot of time

2) some hydrocolloids are negatively charged

It is TRUE.

c) the viscosity of xanthan gum suspensions does not change with temperature.

It is TRUE

d) hydrocolloids have uses in products other than food.

It is TRUE.

e) most hydrocolloids are based on 6 carbon sugars.

It is TRUE.
