Fat-

Too much liquid fat in the system can cause the foam to collapse due to competitive displacement at the interface, and crystals that are too large can pierce through air bubbles.

Ideally the fat content of the cream should be over 35%

Temperature -

Whipping time, overrun, and bubble diameters decreased with increasing temperature. The aggregation ratio of fat globules tended to increase with increasing temperature.

the temperature range of 7.5 to 12.5°C is recommended for making whipped creams.
