Chapter 19:-

1)Quick breads are quick because they can be mixed only in a few minutes and have to be baked or cooked immediately after being mixed.

2)Some healthy substitutes for muffins or quick breads ingredients are fruits or vegetables purees in place of fat, some dried fruits, spices should be added in place of sugar.

3)Quick breads use chemical leavening agents such as baking powder or baking soda to rise the bread whereas in unleavened breads their is no use of leavening agents.

4)It is important to mix and bake quick breads fast so that the chemical leavening agents such as baking powder or baking soda do not expend their carbon dioxide gases.

5) Steps in quick breads mixture procedures are:-

a) Through mixing of all the dry ingredients.

b) The dry mixture should be folded gently until the dry ingredients are moistened.

c) Fat and sugar to be creamed together first until a fluffy texture or light colour is obtained.
