Omission of a meal will cause decrease in the  blood glucose level may cause hypoglycemia and further it will affect the release of the insulin and it will cause decrease in the insulin level significantly as the insulin release is triggered by the hyperglycemic condition means if the glucose level increases in the blood.

Here due to omission of meal the blood glucose level decreases hence the insulin level will also be decreased.
