Question

A small electric dryer removes water from apples under vacuum. The apples are fed to the dryer at a temperature of 25 °C and at a rate of 0.012 kg/s. Water vapour is removed at half the rate at a temperature of 60 °C, and dried fruit remains at 60 OC. Assuming there is no heat loss from the dryer, determine the rate of heat input to the apples from the electric heater in kW. (b) (10 marks) Data for wet apples: Mean specific heat, Cp 3.5 kJ/kg.K Data for water: Enthalpy of vaporisation at 60 °C 2609 kJ/kg
