In aspirin synthesis, phosphoric acid is added to enhance the electrophilicity of the anhydride molecule.

In acidic environment the oxygen of one carbonyl group of the anhydride takes a proton to form positively charged Oxonium species. This positive charge on the oxygen makes the carbonyl carbon more electrophilic and thus the OH group of salicylic acid can carry out a nucleophilic attack on that easily.
