Casein Agar it is the  skim milk agar defined to the growth medium using for the detection of the hydrolytic microorganisms.

There was  microorganism have to ability of degrades the casein by produced proteolytic exoenzyme, its called as proteinase or (caseinase) its  breaks to the peptide bond of CO-NH by introduced H2O into the molecule, generating the smallest chains of proteins called as peptides, it is break down into the free amino acids by extracellular / intracellular proteinases.
