(a) 2 MNO3 + 2 KI => 2 M + I2 + 2 KNO3
or 2 M+ + 2 I- => 2 M + I2
The I- is oxidized to I2 (iodine), which dissolves in the C6H14 and turns it purple/violet.
(b) The C6H14 will be colorless if there is no reaction. This is because both I- and M+ are ionic, colorless, insoluble in C6H14 and remain in the aqueous layer.
