The purpose of adding FeCl3.6H2O /EtOH to egg whites is usually to convert them into their holoforms or to its constituent. This enables the egg whites to be separated from its form to Ovotransferrin. Ovotransferrin is the large avian egg white protein. It generally contains the total of 12 to 13 % of the protein. It possesses the transitional metal such as Fe (III), Cu (III), etc. due to which it binds tightly within its cleft of each lobe. This property makes it effective and an economical source of natural form of antimicrobial agent.

The centrifuge generally is used in labs for the purpose of separating either liquids or fluids mainly based on density. Here also, haloovotransferrin formed can be separated by using centrifuge from its egg white sample. By this step of centrifugation, the solutions can be separated in such way that supernatants can be easily pooled out and cab be further treated with steps like adding ethanol etc to extract the desired product like in this case it would be Ovotransferrin .
