The colour change in sucrose fermentation test detect the production of acid from fermentation.This test includes phenol red broth.its general purpose is to differentiate gram negative bacteria.Phenol red is a ph indicator which turn yellow below 6.8 ph level and fuchsia above 7.4 ph level.If the bacteria ferments carbohydrates and an acid by product is created and the media turns yellow.if the bacteria can not ferment the carbohydrates but use the peptone the ammonia by product is released and make the ph high and turns fuchsia.Thus through the fermentation reaction of carbohydrates the difference of the gram negative bacteria is detected.Gram negative bacilli is detected by it .E.x-Enterobactor
