The pH of the milk is 6 and it is towards the lightly acidic side. On lowering the pH of the milk with an acid, it tends to impact and affect the solubility of the casein, the milk protein and hence it tends to clump the milk. On increasing the pH of the milk with base, it increases the solubility of the milk protein and hence reduces the lump formation. The Alka-Seltzer is an antacid and pain reliever which is consumed for heart burn and indigestion. On adding acid to alka-seltzer it tends to neutralize the impact of the drug on using for indigestion. On adding the base to alka-seltzer, it reduces the acidity of the drug.
