This is quite simple. Change is calculated by final weight - initial weight in a given time duration. For example the change in weight after 10 minutes for the bag placed in 10% sucrose solution will be 23 - 22.1 = 0.9. After 20 minutes the change will be 23.4 - 22.1 = 1.3 and so on.

For the bag placed in 20% sucrose solution the change in weight after 10 minutes will be 23.4 - 22 = 1.4, after 20 minutes the change will be 23.9 - 22 = 1.9 and so on.
