Carboxyl groups have carbon in double bond with an oxygen atom(C=O). The electronegativity of oxygen atom is higher than that of carbon due to which the shared pairs of electrons are pulled slightly towards oxygen atom as a result, the partial positive charge on carbon is formed and partial negative charge on oxygen is formed and the polarity is generated so the carboxyl groups are polar in nature.

Like hydroxyl group which is polar in nature, the carboxyl group also forms hydrogen bond in the water as a result it helps in solubilising the biomolecules in water. The presence of a Carboxyl group in a sugar molecule helps sugar is dissolving in water.
