Cellulose is an aldohexose

And Seliwonoff's test is to distinguish aldose from ketose.

Based on dehydration we can distiguinsh the aldose from ketose.

Ketoses readily dehydrated compared to aldose by Seliwonoff's test.

And ketose gives red color while aldose gives light pink color.
