GI tract has primary organs in digestive tract whereas accessory organs involves teeth, pancreas, tongue, salivary glands and gall bladder.
Food actually passes through primary organs while accessory organs are only involved in enzyme secretion and other fluid secretion to digest the food. Primary organs actually help in digestion where nutrients get absorbed and accessory organs is not the place where nutrients are absorbed, they are just broken down in simpler forms.
