The enzyme mutarotase catalyzes the interconversion of alpha and beta anomeric forms of cyclic sugar. It results in change in optical rotation. The phenomenon is known as mutarotation.

Shown below is an interconvertion between alpha-D-glucopyranose and beta-D-glucopyranose.
