Answer #1

FDA is responsible for ensuring that nation's seafood supply both domestic and imported is safe , sanitary ,wholesome and honestly labeled. The safest way to eat raw fish is if it is previously frozen. Some fishes can be frozen up to 2 years. Freezing is the only pravtical current method to control parasite hazard. Freezing kills parasites in flesh of fish and when cooked also it is killed. But if eaten raw it provides risk.FDA recommends that fish eaten raw shoul be frozen at - 4°F for minimum 7 days or -31°F for 15 hrs. But for Tina and farm raised fished it is not essential because farm raised fish grow in controlled environment so parasite can also be controlled and tuna turns out to be exceptionally clean fish.

New freezing technology of using freezers at - 60°F had made that freezing hardly affects texture and quality of fish.

By using lemon juice on raw fish all.parasites won't be killed ,but the acid in lemon juice cook the fish and chemically denatured protein in fish similar to heating and also change texture of fish.It will clean the fish.
