The sense of taste helps an animal to evaluate what it eats or drinks. The taste or gustatory perception is the sensation when a substance is placed in the mouth reacts chemically with taste receptor located in the taste buds on the tongue in the oral cavity.Ther are five primary tastes can be distinguished: sour, sweet, bitter, salty and umami( meaty or savory). The umami taste , more recently discovered than the other tastes, was first reported by Japanese scientists. Gustatory sensation can also enhanced by olfactory and tactile stimulation.

Mechanism of Gustation

Chemicals that stimulate gustatory receptor cells are known as testants. Once a testant is dissolved in saliva, it can make contact with the plasma membrane of the gustatory hairs, which are the sites of taste transduction.The result is a receptor potential that stimulate synaptic vesicles of the gustatory receptor cell. As a result, the liberated neurotransmitter molecules trigger nerve impulses in the sensory neurons. Different taste arises from activation of different groups of taste neurons.

A research study conducted by Medler and her team (2013) on mice noticed that overweight mice had a reduced sensitivity to a range of appetite inducing taste stimuli including sweetness. In addition to the potential relationship between taste, appetite and obesity the researcher also note the problem of appetite loss among seniors.

Thus Medler says" it is important for us to understand how the taste system works". The more we know the more we can solve the problems related to taste sensation.
