Eating food that is contaminated by specific microbes can cause food-borne illness, which is also caused, “food poisoning.” Appropriate food preservation is an important step to avoid food poisoning. The two federal agencies, the Food and Drug Administration (FDA), and the United States Department of Agriculture (USDA). The main criteria regarding the safety of foods are given below:

  1. Preventing food contamination with pathogens by protecting the food from people, pets, and pests
  2. The raw food and cooked foods are separated to prevent contamination of cooked food
  3. The foods should be cooked at an appropriate temperature, and for a particular period of time to kill pathogens
  4. The foods must be preserved at appropriate temperatures
  5. The raw food materials used, and water must be safe
