In winter, due to decrease in temperature, cell membrane started freezing and results in loss of membrane fluidity. The main changes that usually occur in composition of cell membrane are in membrane lipids and membrane proteins.

In membrane lipids, the amount of unsaturated fatty acids increases whereas reducing in saturated fatty acids. This results in changes in relative proportion of unsaturated to saturated fatty acid composition. Relative increase in unsaturated fatty acid will restrict cell membrane from freeze drying.

Another group of molecules that changes in composition due to cold temperature acclimatization is membrane proteins. The types of proteins those are expressed in higher amount during winter are: membrane repair proteins and osmotic stress tolerant proteins. These cold responsive proteins helps to increase the freezing tolerance in membrane structure.

So, together membrane proteins and lipids help to maintain membrane fluidity by changing their relative proportions.
