Reason:
The breads are leavened by yeast. The yeast (called as Saccharomyces cerevisiae)is most commonly used for leavening bread, the same species used for brewing alcoholic beverage. Yeast ferments the carbohydrates in the flour, including any sugar, producing carbon dioxide. Carbon dioxide gas is produced and held by the gluten network. This causes the whole dough mass to expand and rise which helps to condition the gluten.
