Lipids are nonpolar, so they are likely dissolved in nonpolar solvents ( alcohol, chloroform etc) and do not dissolve ( hard to dissolve) in water. As water is a polar solvent so polar (partial charged molecules) molecules are likely dissolved in it. Lipids do not have partial charge so lipids are commonly not dissolved in water.
